At Long Last, Sag Harbor Has a Pizza Place Again

It has taken more than 10 months, but Sag Harbor has a pizza parlor again. Sag Pizza opened in the Main Street space formerly occupied by the village's beloved Conca D'Oro earlier today.

Michael Cinque and his business partner, Laurent Tourondel, the owners of Sag Pizza as well as LT Burger, also on Main Street, purchased the restaurant in July 2017. After Conca D'Oro closed at the end of October, the new owners spent the ensuing months getting the space in shape, overseeing renovations, and receiving the proper permits and approvals, including for outdoor seating and a liquor license.

Mr. Tourondel, a chef, was helping staffers prepare for their first customers early Friday morning. The secrets to what will make his restaurant's pizzas special, he said, included a lengthy fermentation process for the dough and the use of fresh ingredients, some of which are grown locally. Fresh pasta will also be prepared daily at Sag Pizza. "Everything's homemade," he said.

Mr. Tourondel even had a hand in decorating the space. At the front of the restaurant, a large framed photo of Sophia Loren, circa the 1960s, hangs on the wall. "I downloaded it from the internet and Photoshopped a pizza into it," he said.
